Strapatsada

Today I have a great Greek recipe for all you out there how don't want to cook for hour when you are hungry. It is a delicious, easy, quickly made and Greek dish, and perfect for summer or summer mood. The dish is called Strapatsada and is made out of eggs, tomatoes and feta; doesn't that sound amazing!?

 

Strapatsada, in Greek στραπατσάδα, is very popular in Greek due to his cheap and often available ingredients. Because it is quickly made, they prepare it in restaurants „on the spot“ for you. Greek people eat Strapatsada as a snack or lunch, sometimes even cold. It is especially popular in summer, when you have a lot of fresh tomatoes.

Beside the name Strapatsada, it is also known a kagianas or melemi.

The greatest part of the dish, beside the taste of course is the fast preparation. In total, you need about 15 Minutes to cook your own Strapatsada.

Now attention please, here comes the recipe:

Ingredients:
- 1 onion
- 2 tbsp olive oil
- 6 eggs
- 1 can diced tomatoes or 6 fresh tomatoes
- 1 block feta
- dried herbs (for example oregano, rosemary or thyme)
- bread optional

Instructions:

Peel and chop the onion into small pieces. Then heat up the olive oil in a plan. First add the onion pieces and cook them about 5 minutes. Then add the tomato can or the sliced fresh tomatoes and cook until they become a thick sauce and season them with pepper. In the meantime beat the eggs in a bowl. Add the eggs to the tomatoes sauce and push the eggs around to scramble them. Cut the feta into small pieces and add them just before turning off the heat. If you want season more with some Mediterranean dried herbs like oregano, rosemary and thyme.
Serve the Strapatsada immediately with some bread and enjoy.
