Soutzoukakia also known as Zouzoukaklia is a traditional Greek dish which originally comes from Anatolia. There are many ways to serve it but I will now introduce you to the most known recipe which is Soutzoukakia in a tomato sauce served with rice.
For 4 people you need:
200g of rice
Salt
1 slice of toast bread
2 onions
1 glove of garlic
4 stalks of thyme
500g of mincemeat
Pepper
¼ teaspoon of cumin
1 egg
4 tablespoons of olive oil
800g of tomatoes
1 tablespoon of tomato paste
150ml vegetable broth
Chili flakes
8 stalks of parsley
How to make it:
Cook the rice in salt water.
Take the crust from the toast bread off and soak it in water.
Peel and cut 1 onion and the garlic and cut the thyme leaves as well.
Knead the mincemeat, the onion, the garlic, the toast bread, the egg, the cumin and a bit of pepper together.
shape 18 little rolls out of the mixture.
Heat 2 tablespoons of olive oil up in a pan and fry the rolls in there for about 8 minutes.
Peel and cut the second onion and cut the tomatoes into cubes.
Heat up tow tablespoons of olive oil in another pan again and fry the onion in there. Add the tomatoes and the vegetable broth.
Season it with salt, pepper and chili and let it cook for about 8 minutes.
Wash the parsley and cut it into little bites and mix it into to the cooked rice.
Put the rolls into the tomato sauce and serve it with the rice.
