Yiaourtopita
We have another Greek specialty in our category Culture for you. This time it is a dessert again, called Yiaourtopita. This traditional Greek yogurt cake is made with the typical Greek yogurt that makes it extra moist.
What you need for the yogurt cake:
- 1⅛ cups of sugar
- ¾ cup of butter
- 2¼ cups of self rising flour
- 1 cup yogurt
- 5 eggs (separated into white and yolk)
- 3 tsps baking powder
- Zest of 1 lemon
- Zest of 1 orange
- 1 tsp vanilla extract
What you need for the syrup:
- 1½ cups of water
- 1½ cups of sugar
- ½ tsp vanilla extract
Prepare the syrup by boiling all the ingredients for the syrup in a small pot. It only needs to boil for 2-3 minutes until the sugar disappears and the syrup thickens. Then leave it to cool down.
For the Yiaourtopita whisk the egg whites with a pinch of salt.
Sift the flour and baking powder in another bowl and blend them.
Mix the butter and the sugar for about 15 minutes until it becomes a creamy mass. Add the egg yolks one after another while mixing. Now add the remaining ingredients, i.e. yogurt, lemon and orange zest and vanilla extract. Add ⅓ of the flower and baking powder mixture and ⅓ of the whisked egg whites and blend them with light circular movements. Repeat the process with the rest of the flour and egg whites.
Preheat the oven to 190C. Butter a round cake tin (approximately 26cm in diameter) and pour in the mixture.
Put the cake inside, turn the heat down to 175C and bake for 50-60 minutes until it is nicely colored.
To finish up pour the cold syrup slowly over the hot cake.
