Fried Beetle on Leaf Spinach

Dear Cooking- Fans,

today I want to show you a nice, traditional Greek recipe for a healthy warm meal. Note that the measurement is designed for two people.

If you cook for more people, you have to increase the amount of the ingredients accordingly. Due to the usual time limitations caused by work and empty stomachs, I found a really nice recipe that could be offered for lunch and even for dinner. The duration of the "Spinach- Feta"- Party is only 30 minutes. Perfect for all those cookers that prefer eating fresh and healthy but do also have different things to do than standing in the kitchen for hours - this could be something for the weekend.

What do we need? Well we need:

  • an onion
  • a garlic clove
  • 2 table spoons with typical Greek oil
  • one package of tasty Greek Feta
  • 2 table spoons of bread crumps
  • one table spoon of dried thyme
  • one egg
  • 2 beautiful tomatoes
  • of course salt and pepper
  • nutmeg
  • and if you want and like pine nuts.

That's all! So let's start with the meal:

First we prepare the onion and the garlic clove and put it together into the pan where the table spoon of hot oil is waiting.

Then, put the spinach unfrozen into the pan and add 100ml water. Leave the pan like this for 15minutes so that the ingredients can get well- steamed.

Meanwhile, cut the Feta into 4 equal pieces and prepare the coating like this: Use the bread crumps and the thyme, mix it together and whisk the egg in a seperated bowl. Then, firstly dip the Feta in the egg and then in the coating. Now, it is ready to get into the pan where it can stay for 3-4 minutes until it has a nice golden brown color. They are finished, smells great right?!

Now, let's go on with the two beautiful tomatoes: wash and cut them into little cubes and add them to the spinach 5 minutes before you take it off the oven. Last but not least, furnish the spinach with as much salt, pepper and nutmeg as you like.

Everything has been finished and just has to be put into the right order: decorate the plates with the spinach at the bottom, the tomatoes are dancing around and on the top sits enthroned the Feta. As a small insiders' tip: I usually add some pine nuts. Something that also fits very well to the Greek traditions and our meal is pita.
