Koulourákia

Always, when I walk through the beautiful city of Chios I buy at least two κουλούρια. So this easy bread is really famous and tasty of course otherwise there will not be so many people here eating some. This is the best statement for a recipe to present when so many people like it. If something is homemade and you put some hours of task and your love into then the food tastes even much more better.

 

You do not believe me? Here we go, let's try!
The following measurement is thought for 8 ring- shaped pastry:

  • 500 g flour
  • 1 tea spoon salt
  • 30 g fresh yeast
  • ½ teaspoon sugar
  • 300 ml warm water
  • 3 table spoon olive oil
  • 250 g sesame

So, we sift the flour into a vessel. Then, salt the flour and add the olive oil. Please put the sugar separately into the warm water and the yeast until it is one consistence. Now, add both mixtures together and knead it very well with your hands. For now, we are done. We can put the dough back into the vessel, cover it and leave it for thirty minutes at a warm place.

After these thirty minutes start heating the oven on 225 degrees and prepare the griddle by laying baking paper on it. Alright. The dough needs to get kneaded again and if necessary add some more flour..if not begin to create long sausages (about thirty centimeters) with the dough and put the ends together so that we have eight nice ring- shaped pastry in front of us, on the griddle. The endings you should press hardly so that it stays together even after baking.

The last to do is to use the sesame. Put warm water into a vessel and spread the sesame on a flat plate. Now, the naked κουλουρία shortly into the warm water and then they can bath in the sesame from both sides.
They are done. Let's put them on the griddle and before, finally putting them into the oven leave them like this for five minutes covered so that the sesame sticks to the bread.
After approximately five minutes baking- time, spray a little bit of cold water on the bottom of the oven, close the door of the oven immediately and leave the ring- shaped pastry inside for about 20 or 25 minutes until they have a nicely brown color.
