Zucchini Casserole

Let’s take a look into our fridge to check what we can cook today- hmm.. aah what’s that? We have..Zuchhinis, Feta..and that’s it. Okay perfect I have a great idea what to cook with you- Keep your ears and knives strained: 'Zuchini Casserole'.

Lets prepare the table of our working area with all the ingredients that we need:

  • 300gr Pasta
  • 500g Zucchini
  • 4 table spoons oil
  • 1 little can tomato paste
  • 300g Feta
  • 250ml stock
  • 1 table spoon thyme, salt, pepper and paprika powder.

This measurement is thought for full- fledged stomachs.

At first cut the zucchini. It’s up to you, to decide about the size, if you want slices rods, hearts,clouds or smileys. So our creative zucchini- pieces we can give into the pan with the oil until they change their lightly green color into brown. Then, we add the pasta and leave them together for a few minutes..But we should not wait too long and after seasoning the food with the spices we finally add the stock to prevent the pasta sticking on the ground of the pan.

So, now it’s also time to add the tomato paste and stir it in. Leave the mixture like this until the pasta is firm to the bite- ah sometimes it could be that the pasta absorbs all the stock, then of course add some more. The best is if you can manage to keep some views into the pan..

The last ingredient on my table is the Feta – on yours it is hopefully the same and I was not too fast?! The Feta can be added on the top of the casserole and you can also turn off the range because the Feta just needs to get warm until your food is finished and ready to get served.
