Greek Zucchini Cakes

Today we are presenting a meal which is very easy and doesn't need a long time to prepare (ca. 20 minutes): Small Greek Zucchini Cakes.

This meal has the nice option to eat it alone as a snack or to use it for a side dish to have a big meal.

Here you can find the ingredients (for 4 people):

  • 3 big zucchinis
  • 3 big potatoes
  • 2 big onions
  • 2 eggs
  • 4 table spoons breadcrumbs
  • 4 table spoons flour
  • 1 table spoon fresh mint, chopped
  • 1 table spoon parsley
  • 1 table spoon salt and pepper
  • oil

 

First, wash the zucchini and peel the onions and potatoes. Grate the vegetables coarsely and put it into a bowl. Add the eggs, breadcrumbs, flour, mint and parsley and mix it good. Don't forget the salt and pepper and taste if it's good. If the dough is liquid, add some more breadcrumbs.

Put the oil into the pan and heat it. Finally, use a table spoon to put the dough into the pan and fry it on both sides.

That's it! You see, it is very easy to make this meal and now you have the change to add some things: You can combine this nice zucchini cakes with some meat or just rice. It would be also nice to eat it with some feta and Tzatziki.
