Kourabiedes

Today we will do something simple and delicious, that will easily make the worst day better. These buttery cookies look like clouds and taste as if they would have been taken straight from heaven.

 

 

Ingredients that will make about 5 dozen of cookies:

1 pound unsalted butter, room temperature
1 large egg
2 ½ teaspoons pure almond extract
8 tablespoons powdered sugar
⅛ teaspoon baking soda
5 to 5 ½ cups flour
Pinch of salt


The first step is beating the butter – with the help of mixer that takes like 20 minutes on a medium speed. You can always try to do it on your own as a way to work out without going to the gym. After that, you add an egg and almond extract and mix them together. Next step is to add baking soda and powdered sugar, put them into the bowl with butter after you sift it. Here comes the beating part again, do that for another 10 minutes and then set the mixer on low speed and keep adding sifted flour in a small parts. You are free to add more flour if you feel it's necessary.
Traditionally cookies should have the form of crescents, but feel free to be creative. For every cookie use about two table spoons of dough. Put them in the oven (you don't have to place them far from each other, they don't spread so much) and bake for 15-20 minutes until they get pale brown.
After they are done you can sprinkle them in the powdered sugar, so they look more delicious.
