I would like to invite you to prepare some special Greek meal that you can also find in other countries' cuisines. It is a delightful meal and the taste of the ripped tomatoes in the sun is unforgettable!
So, let's do it!!

 

 

What we need:

  •     5-6 medium Ripe Tomatoes
  •     3-4 Green Bell Peppers, you can also use zucchini
  •     1 cup Rice rinsed
  •     3/4 pound Chopped Veal
  •     5-6 medium Potatoes cut into chunks
  •     2 medium Red Onions finely chopped
  •     2 Garlic Cloves finely chopped
  •     1 cup Greek Olive Oil
  •     3-4 tbsp Parsley finely chopped
  •     1 tbsp Sugar
  •     1/2 tsp Mint, finely chopped
  •     2 cups Water
  •     A pinch of salt and pepper

How to prepare:
For the beginning, rinse and drain tomatoes and peppers. Slice the top, as least as possible and don't throw it away- we will need it later!

Use a spoon to remove the inside part of the tomatoes and the peppers. Save the inner part of the tomatoes you have removed. It will be used for the stuffing.

Mash the inner tomato parts with a blender and mix half of the tomato mash with the rice, the onions (chopped), the spearmint, the sugar and the parsley.
Now, our stuffing is already done. It just needs some salt and pepper as desired.

The next step is to stuff the tomatoes and the peppers and cover them with their tops. Place them in a pan and add  the potatoes (sliced) and pour the rest of the tomato mash.

Add olive oil and bake for about 1 1/2 hour at 375 degrees,
The tomatoes should not become dry. To prevent that you can put on the top of the pan a glass of water.

You can serve it any time! If you like you can also decorate it with parsley or mint.
