Hortosoupa

This recipe is a vegetable soup and we prefer it with pasta. In the Greek language it is Hortosoupa. It is a very delicious meal for the cold days in winter but you can eat it in summer, too.

 

For this recipe we need:

1 onion and potato
2 chopped zucchini
3 grated tomatoes
1 cup of chopped cabbage
1 cup of chopped celery
1 cup of peas

Moreover :

3-4 asparagus stalk which you cut in pieces
1/2 cup of small pasta and olive oil
For the taste you can add pepper and salt. It depends on your preferred taste!

Take a soup pot and heat the olive oil. When it is heated put the onions inside the pot and wait until they are translucent. Afterwards you add tomatoes and cook them for 5 minutes. When the 5 minutes are over you add the other ingredients as zucchini and potato. Just add enough water to cover the vegetables leave the soup for round about 45 minutes on the plate. Then add asparagus and pasta and cook it for 15 minutes more.

A special tip from our ChiosRadio.gr kitchen is to leave the soup 15 minutes after cooking time is over covered because of the flavour.
