Dolmades

Today our ChiosRadio.gr kitchen team will present to you a quick and delicious recipe for Dolmades, the Greek stuffed vine leaves, which perfectly can be served as an appetizer.

 





Ingredients(for 8 servings):

  • 3 onions, finely chopped

  • 300g long grain rice – already cooked

  • 1 tsp dried mint

  • some dill (choose as you like)

  • 50ml olive oil

  • Salt and black pepper

  • 16 vine leaves - cooked

For the sauce:

  • juice of 2 lemons

  • 2 egg yolks

  • 1 tbsp cornflour

How to:

1. First place the onion, rice and dried mint and dill into a large bowl and mix thoroughly.
Add the olive oil and season with salt and freshly ground black pepper.

2. Put two vine leaves together, place a generous tablespoon of the mixture into the center and roll up tightly. Repeat.

3. Put now all the stuffed vine leaves into a pan and cover with a heavy lid to secure the vine leaves. Pour in water to cover the lid. Bring the water to boil and simmer for 10-15 minutes until the leaves are tender and the stuffing is cooked.

4. Remove the stuffed vine leaves from the pan and keep warm.
Reserve the cooking liquid from the vine leaves for the lemon sauce.

5. How to make the sauce: blend the lemon juice, egg yolks and cornflour together in a small saucepan. Slowly stir in the water from the cooked vine leaves and mix thoroughly, taking care that the eggs do no curdle. Cook over a gentle heat for 2-3 minutes until the sauce is thickened.

6. Serve immediately with the cooked vine leaves.
