Greek Spanakopita

Are you one of those persons, who can’t stand spinach? If yes, you obviously never tasted a traditional Greek Spanakopita. If you are already a spinach fan, even better because you will love it, I promise!

 

 


For 10 pieces you need the following ingredients:

-    10 hands of flour (one hand full per piece)
-    a little salt and pepper
-    a little olive oil
-    a little milk
-    a small pan with warm water
-    1 kg spinach
-    2 eggs
-    2 onions
-    optionally 300 g feta cheese

Put all ingredients except for the warm water together in a bowl and knead it. Add the water step by step and keep kneading so the mass turns into dough. Put a little flour on a tablet, roll small balls out of the dough and place them on the tablet, then put a little more flour on them.
Now you can start preparing the filling by putting the spinach in a bowl and add 2 eggs, a little salt and pepper, oil and milk. Cut both onions into small pieces, add them to the spinach mass and mix everything properly. If you like feta cheese, you can add about 300 grams of feta chese, it goes very well with the spinach! Preheat the oven with 180 degrees. As the filling is ready, it is time to roll out the dough balls. Therefore use much flour on and under each dough ball to prevent stickiness. Try to roll them out as thin as possible but preferably without any gaps because otherwise the filling will leak out into the oven.
When you rolled one dough ball out successfully put more or less one big spoon of the spinach mass on it and wrap the dough around it so it looks like a big sausage. Roll the sausage together like a snail shell and put it on a baking tray with baking paper. Proceed like this with every dough ball until you used all of them and there is no more spinach filling left. Bake your Spanakopita for about 40 minutes and from time to time put some water over it. When the surface starts to get red, they are ready to eat.
