Briam

In summer it’s oft too hot, to eat much or even to be able to cook something. I have now the perfect meal for these occasions: Briam. This typical Greek dish has neighbours in France and Turkey and is very tasty, easy and quick to cook. Greek people also call it “Tourlou” what means “various things” or “all sorts of”. It contains mainly vegetables and much olive oil and is very healthy.  has his origins in Crete and his name comes from Turkish. So let’s start cooking!

 


For 4 portions of Briam you need:

•    1 kg potatoes, peeled and cut into 3 mm thin slices,
•    4 big zucchinis, cut into 3mm thin slices too,
•    4 onions, do it too,
•    4 tomatoes,
•    Tomato puree to your own taste,
•    125 ml olive oil,
•    2 tablespoons of parsley, chopped,
•    A good portion of salt and pepper to your own taste.

What you have to do:

1.    Put the tomatoes, the zucchini and the onions in a big ovenproof dish and pour the olive oil onto it. You can add a little bit of tomato puree. Strew parsley on it. Salt and pepper it. Mix it well, so that all vegetables are covered with the olive oil and the tomato puree. Pour around 100 ml water on it.
2.    Bake it uncovered for around 90 min at 200 ° C. Look for it after one hour and check if there’s water left. If not, refill it. But in the end of the baking time shouldn’t be water left so be careful with refilling. Season it to your taste.
