Fava

One very old traditional Greek dish is Fava. Its origin cannot be found anymore, but in Santorini Fava is used like Pasta in Italy. Its name originates from the Latin word “favus” which means broad bean. And that’s almost what Fava is made of. Its main ingredient is yellow peas, which are part of the family of pulses.

Fava is very easy to do it yourself but it is nothing for spontaneous persons, since the peas have to be soaked before. Our recipe takes around 20 minutes of working time.

You need:

•    250 g yellow peas
•    1 big red onion, sliced
•    150 ml olive oil
•    1-2 lemons, juiced
•    Salt & pepper to your taste
•    Optional:  50 g capers

Soak the peas in cold water and leave them over night.
The next day cook it with one half of the onion. Bring the pot to the boil and add salt. Decrease the temperature and leave it simmering for around 90 minutes. Pour off the peas and remove the onion. Puree it with half of the oil and maybe add salt and pepper. Put the mix to a deep plate; add the lemon juice, the last part of the onion rings and the capers and enjoy!
